In the Lunchbox:

Serves 2 (or 4 as a side)
1 teaspoon Extra virgin olive oil
Method:
Combine all ingredients in a bowl and mix well to combine. This salad tastes great made the night before so the flavours have time to develop. Keeps well covered in the fridge for up to 3 days.
