In the Lunchbox:
@brownesdairy Natural yoghurt with chopped strawberries
Pink Lady apple
Celery, carrot and cheese sticks
@phillyaus Light cream cheese tub
@pekishricecrackers Brown rice crackers
Brown Rice + Chickpea Salad
Brown Rice + Chickpea Salad
Serves 2 (or 4 as a side)
250g Rice & Quinoa Heat and serve rice
400g can chickpeas, drained and rinsed
½ punnet cherry tomatoes, halved
½ cup frozen peas, defrosted
Juice of ½ an orange
1 teaspoon Extra virgin olive oil
Method:
Combine all ingredients in a bowl and mix well to combine. This salad tastes great made the night before so the flavours have time to develop. Keeps well covered in the fridge for up to 3 days.
