Brown Rice + Chickpea Salad

September's lunchbox from Sarah Moore Wellness is a taste of Spring to come!

In the Lunchbox:

  • @brownesdairy Natural yoghurt with chopped strawberries
  • Pink Lady apple
  • Celery, carrot and cheese sticks
  • @phillyaus Light cream cheese tub
  • @pekishricecrackers Brown rice crackers
  • Brown Rice + Chickpea Salad

Brown Rice + Chickpea Salad

Serves 2 (or 4 as a side)

  • 250g Rice & Quinoa Heat and serve rice
  • 400g can chickpeas, drained and rinsed
  • ½ punnet cherry tomatoes, halved
  • ½ cup frozen peas, defrosted
  • Juice of ½ an orange
  • 1 teaspoon Extra virgin olive oil

Method: 

Combine all ingredients in a bowl and mix well to combine. This salad tastes great made the night before so the flavours have time to develop. Keeps well covered in the fridge for up to 3 days.
